The crunch comes from Kellogg's Special K Original Cereal. Start by patting a pound of your favorite whitefish with a paper towel. Put 2 cups of the kellogg's Special K Cereal in a shallow baking dish. Stir in a fourth teaspoon of orange rind, a little salt, pepper, tarragon, and a fourth cup of fresh chopped parsley. Dip the fish fillets in melted butter and then coat with the cereal mixture. Place the fillets in a single layer, in a foil-lined baking pan. Bake at 375 degrees for about 25 minutes or until the fish flakes easily with a fork. serve with orange slices.
