Lemon Dill Sauce

2 T Olive Oil
2 T Butter
½ tsp fresh grated Lemon Zest
1 tsp fresh minced Dill
Juice of 1 lemon
½ cup Chicken Broth
3 tsp Cornstarch, 3 tsp cold water
½ cup Half & Half
Salt and White Pepper to taste
Heat olive oil and butter in a small saucepan. Add lemon zest, dill and lemon juice. Add chicken broth, bring to medium heat.
In a separate bowl, combine cornstarch and water, whisk well until smooth.
Add the cornstarch mixture to the pan, add the half and half and bring just to a simmer, whisking often. Add Salt and Pepper to taste. Sauce should coat the back of a spoon.
