Iron Skillet Pineapple Upside-Down Cake

Thunder Bay's casual dining restaurant combines wood with stone and lodge style trapping to give you a true northern dining experience. Take a bite out of the Great Outdoors and grab a bite to eat at Thunder Bay Grille.

¼  Cup Butter
2/3 Cup Packed Brown Sugar
4-5 fresh Pineapple Rounds
6-8 Maraschino Cherries, drained
1 1/3  Cup All Purpose Flour
1 Cup Brown Sugar
1/3 Cup Butter Flavored Crisco
¾ Cup Milk
1 TB Bourbon
1 ½ tsp Baking Powder
½ tsp. Salt
1 large Egg

Powdered Sugar
Whipped Cream

Preheat oven to 350 degrees. Melt butter in a 10 inch cast iron skillet over low heat. Sprinkle brown sugar over melted butter and stir to combine. Arrange Pineapple slices over butter sugar mixture, arrange cherries amongst the Pineapple slices, remove from heat.  In a mixing bowl, beat the Crisco, Milk, Bourbon together with the Egg and the dry ingredients until well blended. Pour cake mix over the Pineapples in skillet, and place skillet into oven. Bake for 35-45 minutes or until toothpick comes out clean. Remove from oven, allow to stand for 5 minutes, then carefully invert pan onto a large platter. If any pineapple sticks to bottom of skillet, scrape it out with spatula and put onto top of cake.
Allow to cool slightly, dust with powdered sugar and serve with whipped cream.
