Good Morning Power Muffin Recipe

Let's face it, we could all use a little boost once in a while. Author Linda Mulholland brings us foods that will help to boost your brain power, including "Good Morning Smoothies" and "Power Morning Muffins."
¼ cup canola oil
1 cup light buttermilk
2 eggs
1 teaspoon of orange extract
1 cup whole wheat flour
½ cup oat flour
½ cup unbleached white flour
1 cup sugar
3 tablespoons ground flax seed
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
½ cup grated carrot
½ cup grated orange peel
½ cup walnuts
Topping ingredients
1 tablespoon cold butter- chopped
2 tablespoons brown sugar
3 tablespoons ground flax seed
Pre-heat the oven to 350 degrees. In a medium bowl, pour canola oil, buttermilk, eggs and orange extract. Whisk ingredients together until well blended (about 100 times) and set aside. In a larger bowl, add whole wheat flour, oat flour, white flour, sugar, flax seed, baking powder, baking soda, salt, cinnamon and nutmeg. Mix until well blended and then stir in carrot and orange peel. Pour the wet ingredients from the medium bowl into the dry ingredients in the big bowl. Mix with a spatula until just blended. Fold in the walnuts.
In a small bowl and using a fork smash together the cold butter, brown sugar and flax seed. Set aside.
Place muffin tins in a muffin pan. Pour the batter from the big bowl into muffin tins. Using your fingers, sprinkle the top of each muffin with the butter, brown sugar and flax seed mixture. Bake for 20 - 22 minutes. Enjoy!
