Granny Smith Apple Spice Muffins
Yield: 24 muffins

Muffins:
4 Cups peeled, chopped Granny Smith Apples (or substitute McIntosh)
4 eggs, beaten
1 cup Vegetable Oil
2 tsp Vanilla Extract
2 tsp Baking Soda
2 tsp Salt
2 tsp Cinnnamon
1 tsp Pumpkin Pie Spice
3 Cups All Purpose Flour
2 Cups White Sugar
1 Cup Brown Sugar
Crumble Topping:
¾ cup All Purpose Flour
¼ cup Brown Sugar
2 tsp. Cinnamon
1 tsp. Pumpkin Pie Spice
6 TB cut up Butter, room temp.
Pre-heat oven to 350degrees. Spray two muffin tins well with Non-Stick Spray. In an electric mixer, beat the eggs well unitl fluffy. Add the oil and beat until well combined. Add the vanilla extract, baking soda, salt, cinnamon and spices. Beat until mixed.
Add the flour and sugar, and mix on low until blended, then mix on medium speed briefly, until smooth. This will be a thick batter! Lastly, fold in the chopped apple chunks by hand, combining well.
For the Crumble Topping, combine the flour, sugar and spices well in a small bowl. Using your fingers, cut the butter into the mix until crumbly.
Divide the muffin batter equally in the muffin pans. Sprinkle an equal amount of the topping over the muffins, bake for 20-25 minutes, until top is firm, and a toothpick comes out clean.
Allow to cool in pans for 10 minutes before removing. If muffins stick a bit, use a butter knife to gently release them from the cups.
