Molly's Gourmet Café Coffee Cookies

Yield: 15 cookies

½ cup granulated sugar
½ cup packed brown sugar
½ cup butter or margarine, softened
1 egg
1 ½ cups flour
1 T instant coffee powder or instant espresso coffee (dry)
1 tsp baking soda
¼ tsp salt
½ cup chopped pecans
1 bag (11.5 or 12 ounces) semisweet chocolate chunks (2 cups)
Coffee Drizzle (below)

1. Heat over to 350.  Beat sugars, butter and egg in large bowl with electric mixer on medium speed until creamy.  Stir in flour, coffee (dry), baking soda and salt.  Stir in pecans and chocolate chunks.
2. Drop dough by ¼ cupfuls about 2 inches apart onto ungreased large cookie sheet.
3. Bake 12-15 minutes or until golden brown and edges are set
4. Cool 4 minutes; remove from cookie sheet to wire rack.  Cool completely, about 30 minutes.  Drizzle with Coffee Drizzle.

Coffee Drizzle
½ tsp instant coffee powder or instant espresso coffee (dry)
3 tsp water
½ cup powdered sugar

Dissolve coffee (dry) in water in small bowl.  Stir in powdered sugar with spoon until smooth and thin enough to drizzle.

You can top these coffee shop cookies with additional chopped pecans
