Jamaican Jerk Marinade and Sauce

Thunder Bay's casual dining restaurant combines wood with stone and lodge style trapping to give you a true northern dining experience. Take a bite out of the Great Outdoors and grab a bite to eat at Thunder Bay Grille.

6 Cloves Garlic
1 Thumb Tip sized knob of fresh Ginger
1 Medium sized white onion, chopped
3 Green Onions, chopped
1 Scotch Bonnet Chile Pepper (more if you like it hotter!)

2 TB Brown Sugar
2 TB Kosher Salt
1 TB Ground Allspice
1 TB Ground Thyme
1 tsp Ground Nutmeg
2 tsp Black Pepper

 

1 Cup Orange Juice
1 Cup White Vinegar
1/2 Cup Olive Oil
1/2 Cup Soy Sauce

 

Blend all items together in blender or food processor. Use this as a marinade for Chicken or Pork. Reserve some of the sauce to brush on the meat while it grills. For authentic flavor grill over wood, or use wood chips with the charcoal.
