The Machine Shed is here today to make a delicious Herb Roasted Cod Loin with Tomato Dill Cream Sauce.
5 oz Cod Loin - 3 each
Garlic Herb Bread Crumbs - 1 oz
Tomato Dill Cream Sauce - 1 oz
Parsley - garnish
Top thawed cod loin with melted butter on a sizzler liner. Top with bread crumbs, cook in blast oven until done (roughly 7-8 minutes).
Transfer to plate and drizzle dill sauce over top. Serve with vegetable and wild rice.
Bread Crumbs:
Jap Crumbs -2 cups
Dry Basil - 1 tsp
Dry Thyme - 1 tsp
Dry Oregano - 1 tsp
Melted Butter - 3 tsp
Chopped Garlic - 2 cloves
Sauce:
Cream Cheese - 1 b
Heavy Cream - 2 cups
Dry Dillweed - 1 Tbs
Lemon Juice - 2 Tbs
Tomato Small Diced - 1ea
Combine heavy cream and cream cheese in sauce pan. Cook on medium heat. Add dillweed, lemon juice and seeded diced tomato. Bring to temperature and keep on steam table to service.
