The Machine Shed's Beer Cheese Dip

Ingredients:

 

                  1 Tbls.  Butter

                  ½ tsp.   Chopped Garlic

                  ¼ oz.    Thyme

                  ¼ oz.    Sweet Basil

                  1 gt.      Heavy Cream

                  1 tsp.    Pork Base

                  7.5#      Shredded Cheddar

                  Roux    (2oz Melted Butter & 2oz Flour)               

                  6oz.      Dark beer (e.g. Guinness)

                  3 oz.     Softened Cream Cheese

                  ½ tsp.  Red Pepper Flakes

                  ½ tsp.  Salt

                  1  tsp.  Worcestershire Sauce

 

 

Start by melting butter in sauce pan; next add garlic, basil, thyme. Saute for two minutes; next add beer, heavy cream, pork base, Worcestershire sauce, salt, and pepper flakes.  Bring mixture to a boil, then add roux. Once thickened, add cream cheese and then the cheddar cheese by 1/3 at a time and let melt. Stir until hot and incorporated. Serve with toasted French bread or with soft pretzels.
